Jan, 14, 2014

Normally, this would be Burger Nite for our new 'clan'.  However, one of the 'clan' has been injured and her husband/caregiver is ill from exhaustion..  My dear, sweet, angel SIL fell last week and broke her hip.  She underwent surgery and is expected to make a full recovery!  Yay!  That's the good news and we are all so thankful!  But her dear, sweet husband, from taking care of her and worrying about her. has exhausted himself and is now 'under the weather' himself.  so, now we need to care for and pray for the both of them.  They are the 'glue' of our Outsiders' clan.

on to my recipe critique for today.  Onion Strings.  These were simple to make.  I was looking for something that could be made ahead, the heated and served at our Burger Nites.  I coated the onion strings, then put them out on parchment paper covered baking sheets.  Next, I froze them until time for dinner (about 5 hours).  Baked them in a 350 degree oven for about 30 minutes.  They ended up burning before the coating even came close to being done.  They tasted like burned flour-covered paste.  So, into the trash went that batch.  Today, I cooked the remaining 2 batches in hot oil (like the recipe instructed).  Once again, into the freezer they went.  I haven't tried heating them yet.  ?However, I did sample them after they froze.  They actually tasted pretty good frozen, so I feel fairly confident that they will be yummy, once reheated.

Wow!  Hold the presses!  I've made it here three days in a row!  Three whole days.  Can you even believe it?!

Okay, enough of that.  On to The Pioneer Woman recipes.  Last night we had tacos for dinner.  Had some leftover meat and tortillsa from enchiladas earlier in the week and I wanted pico de gallo so tacos it was!  Both my Mr. and I LOVE pico de gallo and The Pioneer Woman has the easiesr recipe (find it here).

If you like pico de gallo as much as I do (or even a little bit) then make sure you give it a try!

It's official.  We are in the middle of a heat wave.  It is all of 53 degrees!  If it gets any warmer, I don't know if I can take it!  Air Conditioning, please.

Well, here I am again, 2 days in a row!  Can you believe I could set such a record?!

I'm supposed to be writing my thoughts on Pioneer Woman recipes.  So, last night, we had Sunday Night Stew, only yesterday wasn't Sunday.  It was Friday, making the stew Friday Night Stew instead.  Said stew was very tasty.  I didn't stick 100% to the recipe.  Instead, I cut up the potatoes and put them inside the stew (the recipe called for mashed potatoes served underneath the stew).  I also cut up about half of a small head of green cabbage into bite-size chunks and added it toward the end of cooking time.  The rest of the recipe was done exactly according to directions.  The results were divine!  This stew, paired with salad and homemade bread, made a most wonderful Friday Night supper!  So, whatever day of the week you get a hankerin' for some stew, hop on over and try Sunday Night Stew!  You'll be glad you did!

Well, the weather has finally warmed up.  Today it was in the 50's and sunny skies are forecast for tomorrow.

On Tues. we has The Pioneer Woman's 'Broccoli Cheese' soup.  This soup was very good (especially with single-digit temps. outside).  The only problem is that I was expecting broccoli cheese soup and what it turned out to be was more Cream of Broccoli soup.  It was thick and delicious, but in spite of three cups of cheese, there was no cheese taste.  But, if you love broccoli (I do) and rich, creamy soups, (I do),  then you will love this!  I have enough yummy leftovers in my freezer for another meal.

Okay, so I'm here on time.  I've made it to the keyboard.  You're expecting more?  You're actually expecting to put down real words and turn those words into sentences?  Come On!!!!

On a more serious note, it's warmer today tnan yesterday.  Today we made it up and passed the  freezing mark!  I don't know what the high was today, but right now, at 7:27 p.m. CST, the temperature is a whopping 34 degrees!  I think we might be in the middle of a heat wave.  It' that darned Globl Warming, you know.

Anyway, these posts are supposed to be about my reviews of recipes from The Pioneer Woman.  So last night we tried Loaded Nachos.  These were pretty good.  About the only change s I can think of are use a different cheeses that melts better (I used cheddar) and use a 'wetter' bean, like maybe pintos (I used drained and rinsed Black beans {okay, but not great})  For lunch today, we had Sunday Fritatta.  This was very good (I highly recommend) and also a great way to clean out the fridge of leftovers.  In the recipe the Pioneer Woman lists the ingredients she used, but she also tells you to use what you have on hand.

So far, eveything we've tried has been good or really yummy.  You should give some of these recipes a try!  Next up is Broccoli Cheese Soup.

Ja. 6, 2014

Okay, so I'm not doing a very good job at posting every day.  But, ya gotta give me "A" for effort.  I don't know why people always say that.  Shouldn't it be "E" for Effort?  Anyhow, here I am on this extremely cold Monday morning.  It's 11:40 a.m. CST,  an approximateye 16 degrees outside (feels like 5 degrees).  That's obscenely cold for a girl from sunny So. California.

I bring you my review of The Pioneer Woman's recipe for Monkey Bread.  Straight out of the oven, paired with a cup of steaming hot coffee, it is a superb snack (get the recipe here.)Bake some up (super simple) for dessert tonight or breakfast in the morning. You'll be glad you did!

Jan. 3, 2014 - Happy New Year!

I decided to try reviving my blog. As of the new year, I, once again, am going to try to post something every day. To this end, I've discovered The Pioneer Woman's website. There are many yummy recipes. My plan is to make at least one of her recipes each day, then give my own opinion here. So far, it's Jan. 3rd and I have made 2 recipes. The first recipe I made is called Bowtie Chicken Alfredo. It was YUMMY! So yummy, in fact, that we are having leftovers of it for dinner tonight. My Mr., who doesn't like eating leftovers, is the one who suggested eating it a second time. So try it! You can find the recipe here. The other recipe I made is for Banana Bread. It'delish!
